BBQ Sliders are the perfect party food! They’re easy to make and everyone loves them. Today, I’m sharing my Korean BBQ Sliders recipe. These sliders are made with Bulgogi, a delicious Korean BBQ beef dish. If you’ve never had Bulgogi before, you’re in for a treat! It’s so flavorful and delicious. Throw in a little kimchi and gochujang aioli for good measure? It’s phenomenal!

What cut of beef is used for Korean BBQ?

The most common cut of beef used for Korean BBQ is the sirloin. However, you can also use ribeye, flank steak, or skirt steak. Just make sure to cut the beef into thin strips so that it can marinate and cook quickly. You can also buy it pre-sliced and marinated in Korean supermarkets/grocery stores like H-Mart (which I sometimes do for convenience).

Serve with Kimchi and Spicy Gochujang Aioli

If you want to take your BBQ slider game up a notch, why not try adding some kimchi and spicy gochujang aioli? Kimchi is a traditional Korean dish, made with fermented cabbage and spices. (Read more about kimchi here). It’s the perfect accompaniment to my Korean BBQ Bulgogi Sliders, adding a delicious crunch and spice. You could either buy your own Kimchi from a local Korean supermarket, like H-Mart or Hanyang, or you could buy it online on Amazon. Pro Tip: Those bagged ones that say “Mat Kimchi” are notoriously good! You could even make it at home yourself like me (here’s my mom’s Cabbage Kimchi recipe).

Variations to the Korean BBQ Sliders

There are endless variations you could make to the Korean BBQ Sliders. For example, you could try using different types of meat, like pork or chicken (which are just as juicy and delicious). You could also try using different marinades, like teriyaki or BBQ sauce. My favorite one to use is by Bibigo.

Or you could try adding some extra toppings and sides, like grilled onions, fried onions, mushrooms, peppers, etc. This will add extra flavor, texture, and heat to your BBQ slider, and make it even more delicious! Man, my mouth is just watering from the sound of that. Haha.

Storing and Reheating the BBQ Sliders

If you’re not planning on eating all of the BBQ sliders right away, you can store them in the fridge for a few days. Just make sure to wrap them up tightly in clingfilm or place them in an airtight container.

You can also freeze them for a few weeks. Again, just make sure to wrap them up tightly or store in an airtight container.

When it comes to reheating the BBQ Sliders, simply pop them in the microwave for a few minutes until they’re heated through. Alternatively, you could grill them on the BBQ again for a few minutes until they’re nice and crispy. Or use this as an excuse to whip out your handy dandy Air Fryer! Air fry at 360 for about 4-5 minutes and you should be golden.

What pairs well with Korean BBQ Sliders?

BBQ Sliders are the perfect party food. They’re easy to make, everyone loves them, and they’re perfect for satisfying that BBQ craving. But what goes well with BBQ Sliders? Here are a few of my favorite pairings:

  • Cabbage Kimchi – Adds a nice texture, acidity and kick to the sliders. Either sauté it together with the bulgogi like I did or add it in fresh later at the end. Find it in stores like H-Mart/Amazon, or use my mom’s recipe to make it at home today!

  • Gochujang Aioli – For some added flavor and heat. Here’s my quick and simple 5-minute gochujang aioli recipe, using the amazing Kewpie Mayo!

Equipment

  • 1 Large nonstick skillet

Ingredients

  • 8 brioche slider buns (may use less depending on appetite, and may substitute with dinner rolls)
  • 1 lb marinated bulgogi (can make homemade or buy premarinated at H-Mart)
  • ¼ cup kimchi, finely chopped
  • ½ cup kewpie mayonnaise
  • 1 tbsp gochujang
  • 2 cloves garlic, crushed or minced
  • touch of lemon/lime juice
  • 2 scallions, chopped for garnish

Instructions

  • First prep and marinate your bulgogi for at least 1 hour (I recommend marinating it overnight 12 hours).
  • Get your mise en place ready: Chop up 2 scallions, 1/4 cup of kimchi, 1/2 cup of kewpie mayonnaise, 1 tbsp gochujang, 2 garlic cloves crushed, and a touch of lemon juice. Using a bread knife, slice open the slider buns.
  • In a nonstick skillet, toast the slider buns for about 1 minute on each side with a little butter spread on each slide.
  • Next in another nonstick skillet on medium-high heat, add some oil and fry the marinated bulgogi for about 3-5 minutes (flipping halfway in between). This meat should cook really quickly. (See notes).
  • Prep the gochujang aioli: mix to combine the kewpie mayo, gochujang, garlic, and lemon juice. Set aside.
  • Assemble the sliders: Open the buns and slather some gochujang aioli on each side. Then, generously add some bulgogi. Add the kimchi on top and garnish with chopped scallions. Close the slider and enjoy. Yummmy!

Notes

  • A quick tip on the bulgogi would be to add a few tablespoons of water to prevent any unwanted burning during the cooking process.
