One-Pan Fettuccine Alfredo (No Heavy Cream!)

Welcome back to my food blog! This post is all about the famous, authentic, simple, yet delicious.. Fettuccine Alfredo! (or “Al Burro”). I decided to make it in celebration of National Fettuccine Alfredo Day! So, Happy Fettuccine Alfredo Day! Haha. BETTER yet, this is my One-pan or one-pot wonder recipe! It’s SO simple that you basically just throw almost everything in the same pot/pan and let the magic happen. How easy is that? Let’s do it!

Authenticity

Fettuccine Alfredo is also called Fettuccine Al Burro in Italy. “Burro” means butter in Italian. So I’ve made for you an Alfredo sauce that is just as delicious as the jarred ones you buy in grocery stores, using only the simplest of ingredients (butter, cheese and aromatics). There is absolutely NO Heavy Cream in this recipe, as my Italian coworker adamantly tells me that it is not authentic if it has cream in it.

There are many different variations of this dish out there. I know I’m not the only one to attempt such a dish. But, the more the merrier! I’m in love with studying the real traditional methods of cooking everyday pasta. It’s just a personal favorite of mine. And this Fettuccine Alfredo is no different! You can use heavy cream, you can use rosemary, Italian seasoning, delicious meat or vegetable broth.. The possibilities are endless to make this sauce! You can also add in your choice of vegetables or protein to complement this Alfredo sauce (my personal favorites are mushrooms and shrimp for cream pastas).

Although I’m not too fond of cream pastas, I do indulge in it from time to time and I end up enjoying it very much. So much so that I decided to develop this recipe for you. So let’s try making it, shall we? One-Pan Fettuccine Alfredo, coming right up!

  • Pasta – We’re using Fettuccine for this recipe for obvious reasons 🙂

  • Butter – Provides creamy and fatty flavor

  • Garlic – Aromatic

  • Parmesan Cheese – Use a good quality fresh Parmesan Cheese to be added into the sauce for extra salty and creamy flavor

  • Dried Spice Mix – Parsley, Oregano, and Thyme – for aromatic flavor + garnish

  • Extra Virgin Olive Oil – to prevent sticking

  • Hot sauce + Lemon Zest – for kick + acidity (optional) I like to add some hot sauce on top or eat this with some pickled jalapeños

Keeping it authentic with the easiest Fettuccine Alfredo using absolutely no heavy cream and all done in one pan! Just the simplest of ingredients: Butter + Cheese! Absolutely divine.

Ingredients

  • 8 oz Fettuccine pasta
  • 1 stick unsalted butter
  • 3-4 garlic cloves, minced
  • 2 cups freshly grated Parmesan cheese
  • 2 1/2 cups water
  • 1 tsp salt
  • 1 tbsp EVOO
  • Touch of dried spices (parsley, oregano, thyme), may substitute with Italian seasoning or anything you have/like
  • Salt & pepper, to taste
  • Lemon zest, grated for garnish
  • Hot sauce, for kick (optional)

Instructions

Add water, dried spices, oil, minced garlic, salt, and fettuccine noodles in a large sauté pan. Bring it to a boil, reduce the heat and let it simmer uncovered for about 6-8 minutes, until pasta is almost cooked through.

Stir in your butter & Parmesan cheese. Cook for another 2-3 minutes until sauce is a nice and thick consistency. Season with salt & pepper, as needed.

Plate and garnish with dried parsley, lemon zest and hot sauce. Enjoy! Yummmy.

Notes

The dried spice mix is really up to you what you want to use.. I used these three spices because that’s what I had readily available in my pantry.
