Hey what’s cookin’, good lookin’? Haha. Hello, hello. Welcome back to my food blog, YangYummm, where I talk about one of the most important things in the world: food. This post is another one of my “Air Fryer April” series. Parmesan Truffle Fries!

I mean let’s be real. Who doesn’t love a good ol’ batch of French fries? Right?

Pair them with some drizzle of truffle oil & finish it off with grated Parmesan cheese and fresh parsley? Oof, you’re in heaven! Introducing, my Air Fryer Parmesan Truffle Fries recipe. I guarantee you’ll have the perfect batch of fries cooked and ready to eat in no time!

Can I put French Fries in the air fryer?

Of course! Just make sure that you cook them in batches that will fit your air fryer basket (so as not to overcrowd and lay them on top of each other).

Analogy: Imagine being on a subway train and trying to stick massive amounts of people in one train cart (more than should normally fit). Hate it. But of course, you can still get to the final destination. It’ll just be a dreadful ride. Similarly, your air fryer should be able to get your fries “fully cooked”, but it might look a little dreadful and not as crispy & evenly cooked as you would like it.

How many minutes do you cook fries in an air fryer?

It depends on certain things like:

  • your air fryer (not all air fryers are created equally)
  • how big of a batch you’re cooking (smaller batch = quicker cook)
  • what temp you cook them at

But generally, it should take no more than 15 minutes at 400 degrees in a normal air fryer (like mine)

Why are my fries not crispy in air fryer?

In order to obtain the utmost crispness, you can try a couple of things. First, you can make sure that the potatoes are completely dry (no water) before you season them with oil & salt. Also, always make sure that you do NOT OVERCROWD the basket.

Alternatively, you can try cranking up the temp (+20 degrees) for 2 additional minutes at the very end of the 14 min cook time (only if your air fryer temp can go any higher). Key Note: Make sure you’re tossing the fries every few minutes as well to get a nice and even cook on the fries throughout.

Lastly, you can even try chopping the fries a little thinner, like McDonald’s fries (my wife loves her fries nice and thin, see picture below). Personally? I love my fries a little thicker and more starchy, sort of like Nathan’s or Five Guy’s fries.

Where do I put oil in my air fryer?

I like to season my food with a little bit of oil before air frying. It’s recommended not to spray any aerosol-type oil cans, like PAM, as it can damage your air fryer basket and cause chipping.

Generally, you don’t need to add any oil in the air fryer. But if you want to use a little bit of oil, you can. Either simply add it to the food prior to placing it in the air fryer or rub some on the bottom of the basket (Read your owner’s manual for more specific guidance).

Full disclosure: I used to use PAM on my air fryer basket in the past, until I recently learned that it can actually damage it. I immediately stopped doing that and now I actually went out and bought a non-aerosol type of spray for my cooking oil (Wellsley Farms Organic Extra virgin Olive oil from BJ’s).

Variations to Parmesan Truffle Fries

You can definitely try many different variations, toppings, seasonings and sauces for this dish! As always, make sure you rule out any food allergies before deciding to make a certain product. Here are some ideas to make it differently:

  • Parmesan Garlic Fries – air fry the potatoes the same way and just prepare a nice melted butter garlic sauce with fresh parsley to coat the fries immediately out of the air fryer!
  • Lemon Pepper Fries – air fry the potatoes the same way. As soon as it comes out of the air fryer, coat them with a nice seasoning of freshly cracked black pepper & lemon juice/zest.
  • Mexican-style – Top it with some fresh cilantro, melted cheese, black beans, jalapeños, sour cream, and corn-chili salsa.
  • Classic Korean-style Kimchi Fries – Add some fresh kimchi to the fries. Top it with some mayo, ketchup, and chopped scallions.
  • Different dips/sauces: Dip them in some ranch dressing, cilantro-lime sauce or the classic ketchup-tobasco combo.

The possibilities are endless! French fries are just a crowd favorite across the board. Even you children would love them, just like they love McDonald’s (except homemade is ALWAYS better!).

Ingredients
  • Idaho Potatoes – Classic potato that’s used to make French fries. You can also just use Russet Potatoes as a viable substitute. (Note: Idaho potatoes are russet potatoes strictly from Idaho).

  • Salt – to season the fries

  • Truffle Oil – this recipe is all about Truffle fries so this is a must! (I got my Mantova brand on Amazon, but it’s readily available at any local supermarket near you!) But if you don’t have it or you can’t find it, you can definitely substitute it with extra virgin olive oil or any other neutral oil.

  • Parmesan Cheese – adds another layer of salty & fatty flavor. I love Parmesan as a topping on my fries. It’s lovely and delicious! (That being said, you can skip this part if you’re lactose intolerant or you just don’t like cheese)

  • Fresh Parsley  – to add freshness as garnish

Equipment

  • 1 Air Fryer

Ingredients

  • 1 Idaho potato, chopped into sticks of desired length & thickness (may substitute with russet potatoes)
  • 2 tbsp Truffle oil
  • 1 tsp Salt
  • 2 tbsp Grated parmesan cheeese (may use more if desired)
  • 1 tsp Fresh parsley, chopped for garnish

Instructions

  • Wash & brush potatoes thoroughly with a vegetable brush/scrubber. Chop both tips of potato. Then, chop the potato once lengthwise at one end of the body (to create a base) & lay it flat onto the chopping board. Proceed chopping the potato lengthwise (to desired thickness) until all the way across (see Notes for thickness details). Next, chop the potatoes again lengthwise into long sticks (to same thickness). See video for reference. When you're done, rinse them under cold water & pat them dry with a paper towel on a flat surface.
  • Once completely dry, place them in a medium mixing bowl. Add 1 tbsp truffle oil into the bowl & mix to coat the potatoes. Then, sprinkle some salt on top and give it a nice mix until every potato is covered.
  • Throw them into the air fryer basket and cook at 400 degrees for about 14 minutes, tossing the fries in the basket every few minutes.
  • Once the fries are done and crispy, remove them from the basket & drizzle some more truffle oil and garnish with chopped parsley and grated parmesan cheese. Plate it up and enjoy! Yummmy!

Notes

  • For crispier fries, you can chop the potatoes into thinner sticks! (I like them a little thicker so I chopped it into about 1/4″ wide sticks)
  • Try not to overcrowd your air fryer basket with the fries. If your basket is too small, cook it one batch at a time & just reheat the first batch for 2 minutes to ensure freshness to eat it all together.
